Back in May, I vacuum sealed an 8 0z block of cheddar cheese. I placed it on a shelf in the pantry and checked on how it looked whenever I thought about it.
The only thing I noticed was that a small amount of oil leeched out of the cheese. It didn't leak out of the Food Saver bag.
A couple of nights ago, I got really hungry for some cheddar and all I had was the sealed package in the pantry.
I opened the bag, smelled it, and cut off a piece and put the remainder in the fridge.
I tasted totally wonderful. And... I'm still alive.
I'm not suggesting that you do this, I'm simply telling you what I did.
I have heard cheese will last for years this way.
It will continue to age while in storage so I started with mild cheddar.
I love my cheese.
